The perfect homemade Gulab Jamun 🤤 (my mom would be so proud.. even though the last time she made them, they were burnt 😂 sorry mom) You HAVE to try these, even if you’ve never had Gulab Jamun before! They are sweet little balls of delight perfect for any occasion 😍 Servings: 12 gulab jamun Ingredients: - 1 cup milk powder (100g) - 3 tbsp flour (30g) - 1 1/2 tsp baking powder - 1 egg - 3 tbsp cream (40g) - 2 tbsp ghee (30g) - 1 1/4 cups water - 1 cup sugar - 1-2 cardamom pods Method: - Mix the milk powder, flour and baking powder in a bowl - Separately whisk together the melted ghee, egg and cream - Pour into the dry ingredients and use a spoon to bring together into a dough - Lightly knead the dough to make sure there are no lumps and refrigerate for 20 min - Knead the dough again when it’s cooled to make sure it is smooth - Form into small balls (jamuns) about 20g each. Apply light pressure between your palms while circling one palm, and lightly roll to form perfect balls. Make sure there aren’t any large cracks on them. Put back in the fridge - Mix sugar, water and cardamom in a saucepan and bring to a boil. Simmer for 5 min then take off the heat - Heat 2” of oil or ghee in a wok - Once the oil is warm (but not too hot, test with a small piece of dough - it should rise to the surface slowly), gently transfer half of the balls - Swirl your wok so the jamuns start to float and turn, then use a large strainer to gently swirl them as you fry them. Fry for 4 min until they are evenly brown - Strain the jamuns while you reheat the syrup. Once boiling, put them into the strip and simmer for 5 min on medium heat. Make sure they are well coated. Hydras and Volvox 🐙These graceful and alienesque critters are named Hydra viridissima and are among the main representatives of freshwater Cnidarians, a primitive animal group that includes jellyfish, corals and sea anemones! Hydras are found in all continent across the Earth except for Antarctica and are one of the simplest multi-cellular forms of life known to humanity. Their green colour is due to a symbiotic relationship with Chlorella, a green algae that lives inside the hydra’s cells producing sugars from sunlight and giving some of this precious energy to the hydra in exchange for protection against predators and a well-suited environment! This relationship is mutualistic, meaning that they both benefit from the partnership. This source of sugar can be critical for hydras, especially when they can’t find anything to eat!There are aout 11 000 different species forming the Cnidaria phylum and all of these species are characterized by specialized cells called cnidocytes. These stinging cells are most abundant on the tentacles and when triggered by a predator or a prey, they explosively unleash their content made of a nematocyst equipped with barbs, spines and a long filament. This nematocyst is what makes Cnidarians effective predators by injecting a paralyzing cocktail of neurotoxins or by entangling their preys. Can you see small spikes on the tentacles? These are the cnidocils!
