More turkey meatball content lol Pesto Turkey Meatballs: -1 lb ground turkey -1 egg -1/4 cup bread crumbs -4 cloves minced garlic -2 ish large spoonfuls of pesto (measure with heart) -2 tbsp chopped parsley -2 tbsp chopped chives -1/2 tsp onion powder -1 tsp salt -1/2 tsp black pepper -1/2 tsp dried basil -1/2 tsp oregano *Add all ingredients to a bowl and mix until combined. Shape into 1 inch balls and place on a baking sheet. Bake for about 12 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature.  Lemon Garlic Orzo: -1 tbsp olive oil -1 tbsp butter -1 cup orzo -2 cups chicken broth -1 shallot, chopped -4-5 asparagus, chopped -4 cloves minced garlic -2 tbsp chopped parsley -juice of 1 lemon -zest of 1 lemon -1/4 cup shredded parm -1/4 cup heavy cream  -salt and pepper to taste *Sauté shallot in some olive oil over medium heat until they have softened. Add in asparagus and sauté for another minute. Sprinkle a little salt on the veggies. Add butter and garlic and saute for 2 more minutes until fragrant. Add in orzo and brown (about 5 minutes and stir frequently so it does not burn). Add in chicken broth, lemon zest, and lemon juice. Bring to a boil, cover and reduce to a simmer. Let simmer covered for about 10 minutes or until most of the liquid is absorbed. Add in and extra squeeze of lemon juice, salt, pepper, parsley, cream, and stir.
