Miso Glazed Chicken Skewers Marinade (4 chicken breasts): ½ cup soy sauce 2 tbsp miso paste 2 tbsp hot honey 2 tbsp garlic chili sauce 2 tbsp mirin 2 tsp ginger 10 cloves garlic, minced 2 tbsp chives 1 tsp garlic powder 1 tsp onion powder ½ tsp paprika Miso glaze: 2 tbsp miso paste 3 tbsp soy sauce 1 tbsp sriracha 1 tbsp garlic chili sauce 1 tbsp rice vinegar 1 tbsp hot honey Bang Bang Sauce: 1/2 cup mayo 2 tbsp garlic chili sauce 1 tbsp hot honey 1 tbsp sriracha 1 tbsp rice vinegar Salt and pepper, to taste Method: I cut some chicken breasts into large chunks. I threw in a bowl with all marinade ingredients, and let it sit in the fridge for about an hour (can do longer if desired) before adding to some skewers. We grilled them on medium/high heat for about 10 minutes total, flipping halfway through (until the meat thermometer read 165). In the last minute or so on the grill, baste with the miso glaze sauce for extra flavor boost.
