What if you froze it, and then covered it in chocolate to turn it into a chocolate bar?The viral pistachio Dubai one is sorta mushy too on the inside, and works well. If it’s frozen you’d be able to.

hi there:) pastry chef here. my first attempt was so similar! you're correct about the sugar temp but before i had a thermometer i used to use 🤏 less eggwhite or added white choc which helped it set
