@georginaelizat: Same day olive focaccia This focaccia is SO good and can be made within a few hours. Perfect dipped in evoo and balsamic or for sandos 500g/ 4 cups white bread flour 8g/ 2 tsp instant yeast 450g /2 cups lukewarm water 1 tsp / 5g honey 10g/ 2 tsp fine salt 4-5 tablespoons extra virgin olive oil Around 9 black + green olives 1-2 tsp flaky salt Instructions 1. In a large bowl, whisk your water, yeast, 1 tbsp oil, honey and salt. Leave for 5 minutes, until foamy. Then add your flour and mix in with a spatula until all combined and a wet dough has formed. Cover with cling film and leave to rise at room temp for 15 minutes. 2. Then stretch and fold the focaccia by pulling the sides in on itself. Cover and leave again for 15 more minutes. Then repeat this stretch and fold one more time. Cover for an hour and a half afterwards. 3. Then add 2 tbsp olive oil to a lined 9x16 baking tray. Add your dough. Stretch and fold once more and leave to rise with a cover for 1 hour. 4. Pre-heat your oven to 180C/ 360F. Then, add the remaining olive oil on top before using your fingers to create the dimples and spread the dough out to the sides of the pan. Add the olives on top, followed by the flaky salt. Bake for 25-30 minutes, until golden and crispy on the outside.
