Hi if you love this try a Bengali egg curry! Check out “egg bhuna” it’s a bit more spicy but you can adjust the spice level so it’s all good

Try frying the eggs after you boil them (so you get a brown layer on them) before adding to the curry - takes it too the next level.

That looks so good. When my mom makes Viet braised pork and eggs, she will fry the peeled eggs a bit so they get the fried egg skin. Could be good in this!

Oh my gosh, not to be that person, but Coconut milk is hard to get where I stay, would substituting it with any milk be fine? I'm not sure if it's added for its texture, flavour, or as a bulker, but a substitute would be appreciated because this looks amazing😭😭😭❤️✨

You did a great job - just a few things: more curry leaves + pandan leaves if you can get them. Sri Lankans don’t use garam masala, replace with Sri Lankan raw curry powder
