@nicole_and_sammy_: We got Sammy’s bloodwork results back and unfortunately his hematocrit values went in the wrong direction 😔 His reticulocytes also dropped to 47 (meaning he is not regenerating RBCs) and his WBCs are elevated. He is acting normal and is quite feisty lately! But we were hoping he would be in the normal range by now. High protein marry me chicken pasta 🍅🍝💌 recipe below!  INGREDIENTS:  - 3-4 chicken breasts  - High smoke point oil (avo oil) - 3-4 cloves garlic (minced)  - 1/2 cup chicken bone broth  - 1 cup unsweetened and UNFLAVORED almond milk  - 2 heaping tbsps nutritional yeast - 1/2 cup sundried tomatoes  - 1 tsp dried oregano  - 1/2 tsp red pepper flakes - 1/2 tsp sea salt  - Box of high protein noodles of your choosing, if you are gf, I recommend  @GOODLES gluten free pasta  - 1 tbsp arrowroot starch  - 1/4 cup basil pasta sauce (@Yo Mama's Foods)  - Cast iron pan / oven safe pan  TOPPINGS:  - fresh basil *optional  - Red pepper flakes *optional INSTRUCTIONS:  - Preheat your oven to 375 - start by patting down your chicken breasts with a paper towel, season both sides with salt and pepper.  - In a cast iron skillet over medium heat, add a generous splash of avocado oil. Once the pan is hot (not smoking), add in your chicken. Cook about 3-4 minutes per side. *they don’t have to be fully cooked, they are going in the oven* once chicken is done, set aside on a plate.  - In the same pan, switch the heat to low. Add another drizzle of avocado oil. Add in your minced garlic and saute about 2-3 minutes.  - Then add in your chicken bone broth, almond milk, nutritional yeast, sun dried tomatoes (drain out the oil as much as you can), dried oregano, red pepper flakes and sea salt. Mix until well combined. Increase the heat just slightly and bring it to a steady simmer. Add your chicken back into the pan. Toss to coat in the sauce.  - Pop it in the oven for 15-18 minutes or until your chicken reaches an internal temp of 165.  - Boil your noodles according to package instructions. Drain and set aside for now:  - Remove cast iron from oven, take your chicken out of the pan, set aside to rest for now.  - In the pan, stir in 1 tbsp arrowroot starch (this will thicken the sauce). Then stir in your cooked pasta noodles. Add 1/4 cup of basil pasta sauce. Stir until noodles are fully coated. Slice your chicken, then it’s time to plate!  - Add your pasta, top with chicken.
