STRAWBERRY CHEESECAKE  GALETTE 🍓 Ingredients: • 1 ½ cups all-purpose flour (200 g) • 7 tbsp cold unsalted butter, cubed (100 g) • 1 tbsp granulated sugar (12 g) • Pinch of salt • 3–4 tbsp ice water (45–60 ml) For the filling: • 7 oz cream cheese (200 g, like Philadelphia) • 1 egg yolk • 2–3 tbsp granulated sugar (25–35 g, to taste) • 1 tbsp cornstarch (10 g) • 1 tsp vanilla extract (5 ml) To assemble: • 1 cup sliced strawberries (150–170 g; if very juicy, mix with 1 tsp cornstarch) • 1 egg yolk + 1 tsp milk — for brushing • Granulated sugar — for sprinkling Mix flour, sugar, and a pinch of salt in a bowl. Add the cold cubed butter and rub it into the flour until the mixture resembles coarse crumbs. Gradually add ice water, just enough for the dough to come together. Form into a disk, wrap in plastic wrap, and chill for 30 minutes. Meanwhile, make the filling: beat the cream cheese, egg yolk, sugar, vanilla, and cornstarch until smooth. Roll out the chilled dough into a 12-inch (30 cm) circle on parchment paper. Spread the cream cheese filling in the center, leaving a ¾-inch (2 cm) border.
