Letting it rest relaxes the meat and you lose all that juice. Then when you put it pack on to sear, you sear off the juice it has just created… drying it out.

I do it exactly the same way! 180 Degrees super smoke on my Weber Pellet then I take it off let it rest and Sear it over my Weber kettle with a vortex
