These were incredible, two of my favorite foods! Here is how I made them: Ingredients • 1 lb roast • Salt, pepper, garlic powder, onion powder, paprika • 3 tbsp oil (for searing) • 6 guajillo peppers • 2 ancho peppers • 6 arbol chilis • 2 tbsp tomato paste • 1 onion • 5 garlic cloves • 3 cups beef broth • 4 oz cream cheese • 8 oz monterey jack • 8 oz mozzarella • 2 cups flour • 4 eggs, whisked • 3 cups breadcrumbs • Oil for frying • Red onion, diced • Lime • Fresh cilantro Instructions Season your roast with salt, pepper, garlic powder, onion powder, and paprika. Heat oil in a pan and sear both sides. Move the roast into your slow cooker or braising pan. Into the same pan add the guajillo peppers, ancho peppers, arbol chilis, tomato paste, onion, and garlic. Cook for about a minute, then pour in the 3 cups of beef broth and bring it to a simmer. Once simmering remove from heat. Blend the mixture smooth and strain it over the meat. Cook for about 4 hours in the slow cooker. Shred the beef and let it cool slightly, then mix it with the cream cheese, monterey jack, and mozzarella. Shape into mozzarella sticks. Coat each one in flour, then into the egg and breadcrumbs twice for a double coating. Fry until golden and crispy. Serve with the juice from cooking the meat and garnish with red onion, cilantro, and lime.
