Pumpkin spice latte cinnamon rolls 🧡 this heat wave is making me miss the fall season. Especially Halloween! Who else got their Halloween costume already planned out right now? Pumpkin brioche dough: * 1 3/4 tsp active dry yeast * 113g whole milk, lukewarm * 38g brown sugar * 450g all-purpose flour * 3/4 tsp salt * 1 tsp pumpkin spice * 135g pumpkin puree (patted dry with paper towels) * 1 egg, lightly beaten, at room temperature * 1 tsp vanilla bean paste * 90g unsalted butter, at room temperature * 1/4 cup heavy cream (for pouring over rolls before baking) Brown Sugar Pumpkin Filling: * 87g unsalted butter, at room temperature * 150g light or dark brown sugar * 50g pumpkin puree (patted dry with paper towels) * 1 tbsp pumpkin spice * pinch of salt Coffee Cream Cheese Icing: * 124g cream cheese, at room temperature * 57g butter, at room temperature * 207g powdered sugar, sifted * 60g hot water * 2 tsp espresso powder * Pinch of salt * 1/2 tsp vanilla bean paste ‼️Make sure you pat your pumpkin puree dry with a paper towel. Taking the excess moisture out of the pumpkin puree is essential for this recipe!! Make the pumpkin brioche dough until your dough is nice and elastic. Cover and proof for 1 hour. Roll to 18x12” rectangle. Spread pumpkin spice filling. Roll. Chill dough log in freezer for 30 minutes (this helps make cleaner cuts). Cut into 12 even pieces. Place in your prepared pan.
