@padmalakshmi: This is a South Indian vegetable curry known as a poriyal in Tamil. People assume that all curries are spicy, but here’s a lovely quick stir fried curry that is mild and easy to make. Use this recipe as a template with other vegetables besides green beans, like cabbage, zucchini, or even boiled potatoes with a littler turmeric and fresh ginger added. This is best to serve as a side dish with any gravied curry and rice. This versatile side dish is also great paired with a number of dishes that aren’t necessarily Indian. I’ve even just topped some quickly scrambled eggs with this portal and wrapped it in a tortilla for a quick vegetal breakfast burrito. If you don’t have the shredded coconut you can still make this!
