Lemon cake 🍰🍋 Ingredients  Lemon Cake: * 2 1/3 cup Cake Flour * Zest of 2 Lemons * 1/4 cup Freshly Squeezed Lemon Juice about 1-2 lemons * 1 cup Granulated Cane Sugar * 2 tsp. Baking Powder * 1/4 tsp. Baking Soda * 1/2 tsp. Fine Sea Salt * 6 tbsp. Unsalted Butter softened * 1/2 cup Olive Oil * 3 large Eggs room temperature * 1 1/4 cup Whole Milk room temperature * 2 tsp. Vanilla Extract Cream Cheese Buttercream Frosting: * 1/2 cup Softened Unsalted Butter * 8 0z Cream Cheese * 4 cups Powdered Sugar * 1 1/2 tsp. Vanilla Extract * 1/8 tsp. Fine Salt * 1 tbsp. Heavy Whipping Cream * Yellow food coloring (optional) In a bowl add lemon zest and granulated sugar. Rub them together with your fingers so the sugar soaks all the lemon flavor. Add olive oil and whisk them together by adding one egg at a time. Add vanilla extract to the batter and lemon juice. In a separate bowl add softened butter and flour, baking soda, baking powder and salt. Combine them with your hands by breaking the butter until is well mixed. Pour the dry ingredients into wet ingredients, fold them together and add the milk at the end. Bake them into 3 batches on a 8 inch cake pan, coated with butter at preheated oven 350F, until the toothpick comes out clean. Let them cool down completely before layering. Meanwhile prepare the frosting by adding room temperature butter and cream cheese into a mixing bowl. Mix them on a medium speed followed by powdered sugar, vanilla extract, salt, and whipping cream. Towards the end add yellow food coloring. Mix until the texture is creamy and smooth. Spread the frosting on fully cooled cake layers. Decorate by your choice.
