I’m all about one pot dinners and here another one for you to try loaded with nutrition for those busy weeknights! You’ll Need: - 1 lb ground chicken - 1 cup cherry tomatoes, halved - 1 red onion, chopped - 8oz whole grain pasta, dry - 1/2 cup cream or milk - 2 cups low sodium chicken broth - 1 cup marinara sauce - spinach, chopped - Parmesan - mozzarella - spices: salt & pepper, oregano, and garlic powder You’ll Need To Do: - In a pan over medium heat, add some oil. Once warm, add chicken and cook all the way through. - Add in tomatoes and onion. Season with above spices. Mix together and cook for about 5-6 minutes to break down tomatoes and onions. - Add in pasta, chicken broth, marinara sauce, and milk. Get to a simmer. - Allow to simmer for about 10-12 minutes until pasta is al dente. - Add in chopped spinach and cheeses.
