A silky potato, cipollini caramelized onion, and a demiglace from my beef braise. @weirsbutchers got the best steaks 🥩 ♥️ Plating this up after cooking the steak perfectly 240g in weight but thickness matters for cooking this was 2 inches (5cm). I know it’s conventional to use meat thermometers but I don’t like holes in my filet. Luckily, the hot caster iron sear does the trick, oven cooked for another 4 minutes 180°C then return to the fire for butter basting. Turn off the heat, a cast iron pan stays very hot so you’ll need to rest your filet on a mise so that the juices redistribute and it’s perfectly rested without overcooking. ♥️ #steak #beef #wagyu #plating #theartofplating #truffle #blacktruffle #dinnerplate #sauce #steakdinner
