Collard Greens Salad Wrap - Healthy Recipe ! I’m always looking for ways to cut out some unnecessary carbs from my diet (such as tortilla wraps). This is a healthy and delicious way of doing so! I can eat this every day if I could. 👨‍🍳 Prep time 15-20 min  Serves: 4-5  🌱 Dressing Ingredients (Blend the follow and set aside)  -¼ cup olive oil -½ a lemon (juice) -½ an orange (juice and pulp for more fiber!. I love cara cara oranges)  -2 tbsp maple syrup or honey -1 tsp dijon mustard -sprinkle salt  -½ a shallot  🥬 Wrap Ingredients - Several collard green leaves  - 1 bundle of kale (chopped)  - ½ cup of nuts such as pumpkin seed  - ½ cup of nuts such as pistachios or almonds, I used sunflower seeds  - ½ can cannellini beans (drained)  - ½ avocado diced  - Hummus (garlic or plain)  - Chicken breast slices (mine was oven-roasted). Although more ideal to have actual chicken breast, high quality deli meat can be an option for those with a time crunch!)  In a bowl, mix kale, both types of nuts, cannellini beans, avocado, and blended dressing ingredients  Take 2 collard green leaves side by side (cut off some of that hard stem towards the base), spread hummus on top, add slices of meat, and add the kale/nut/bean mix on top.
