Sweet, savoury and packed with umami — a side dish that steals the show every time. ⸻ What I Used (2 portions): • 1 Japanese eggplant (or small regular eggplant) • A touch of vegetable oil For the glaze: • 70 g miso paste — 2.5 oz • 2 tbsp mirin • 1 tbsp cooking sake • 2 tbsp vegetable oil • 1 tbsp white sugar To finish: • Sesame seeds • Chives or spring onions (optional) ⸻ How to Make It: Cut the top off the eggplant, slice it in half lengthwise, and score the white flesh with diagonal cuts. Brush lightly with vegetable oil. Warm up a grill or frying pan and cook the eggplant skin-side down first until it becomes nicely browned and soft. In a bowl, mix the miso paste, mirin, cooking sake, vegetable oil and sugar until smooth and velvety. Transfer the eggplant halves onto baking paper, spread the glaze generously on top, and bake at 200°C / 390°F until the glaze starts to bubble and caramelise. Let it cool for 5 minutes.
