Marry Me Chicken Pie  Proper Comfort Food ❤️ Easy Recipe:  - 1 kg chicken mince - 2 tbsp oil - 1 onion - 3 cloves garlic - 2 tsp paprika - 1 tsp oregano - 1 tsp thyme - 1 tsp salt (or to taste) - 1 tsp black pepper - 1 tsp red chilli flakes (optional) - 1 tbsp tomato purée - 3 tbsp sun dried tomato pesto - 250 ml / 1 cup chicken stock - 1.5 tsp corn flour - 4 tbsp double cream or creme fraiche - 250g baby spinach For the Mashed Potato: - 1 kg potatoes  - 250 ml milk - 75g butter - 3 garlic cloves - Salt + pepper to taste Method: 1. Heat oil in a pan over low heat, then sauté the onions and garlic for 3-4 minutes until softened. 2. Add the chicken mince (either breast or thigh, or finely diced chicken) along with the spices. Optional: add chilli flakes for a spicy kick. 3. Stir in the tomato puree and red pesto. Cook over medium heat for 5-6 minutes until the chicken changes colour, breaking up the mince to prevent clumping. 4. Add your choice of vegetables (mushrooms work well) and cook until the liquid has evaporated and the mixture becomes dry. This should take about 10 minutes, depending on the vegetables. 5. Drain the potatoes and mash them with the garlic butter milk. Season with salt and pepper to taste. For a smoother mash, pass it through a sieve; you can add more milk if you prefer a creamier consistency, though I prefer it to hold its shape. 10. Transfer the chicken filling to a pie dish (note: I made a smaller pie in the video). Top with a generous layer of mashed potatoes. You can sprinkle your choice of cheese in between if desired, and finish with a sprinkle of dried parsley. 11. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until the top is golden and slightly crisp.
