The longer the better with occasional shaking Before bottling add 8 ounces of 2:1 Simple Syrup (2 parts sugar dissolved in 1 part water) OR 8 ounces of food grade glycerin Option 2: (the most common) 16 ounces of 80 proof alcohol Roughly 25 vanilla beans split in half Steep for at least 3 months at room temperature. Shelf Stable Option 3: alcohol free fridge method Make 16 ounces of 2:1 Simple syrup Add roughly 25 vanilla beans to the syrup and blend in a blender until smooth. Strain and store in the fridge for up to 6 months Option 4: alcohol free freezer method Add 25 vanilla beans and 16 ounces hot water to a blender. Blend until smooth, strain. what's your take on alcohol quality and the flavor of the extract? I've seen both to use the cheapest vodka and that you need to use a decent alcohol for your extract to taste good
