Ingredients: @Poppi for the good vibes 2 can chickpeas, rinsed and dried Cauliflower florets 2 chicken breasts Juice of 2 lemon Zest of 1 lemon @NearEastProducts quinoa/brown rice Shredded carrots @athenosfeta feta @Boar’s Head tzatziki @Whole Foods Market tahini @Josie’s Organics baby spinach/kale/arugula Seasonings: onion powder, turmeric, smoked paprika, dried dill, salt, pepper, @Primal Kitchen Foods avocado oil Instructions: 1. Season chickpeas with avocado oil, onion powder and salt, and airfry at 400° until crispy 2. Season cauliflower with above seasonings minus dill and turmeric, and airfry at 400° until crispy 3. Season chicken with above seasonings on both sides, brown on both sides on cast iron, add in lemon zest and 1/2 lemon juice, then finish cooking in oven at 425° 4. Cook quinoa as directed 5. Mix greens with lemon juice and tahini 6. Assemble and add toppings as desired 7.
