@katie_cooks_717: Cod In White Wine Tomato Sauce #cod #fish #quickrecipes Ingredients: * (4) 6-7 oz Pieces Of Cod * 2 Tbsp Olive Oil * Kosher Salt/Black Pepper/Poppa Earle’s * 2 Tbsp Olive Oil * 1 Shallot - Minced * 4 Cloves Garlic - Minced * 1/4 tsp Red Pepper Flakes * 1 Pint Grape Tomatoes - Halved * 1/3 Cup White Wine * 2 Tbsp Lemon Juice - About 1 Large Lemon * Lemon Zest * 1/2 tsp Kosher Salt * 1/2 tsp Sugar * 1/4 tsp Black Pepper * 1/3 Cup Fresh Parsley Directions: 1. Pat cod dry & season both sides of the fish. 2. Heat 2 Tbsp olive oil in a large sauté pan over medium heat. Add in the shallots, garlic & red pepper flakes & sauté for one minute. Add in the halved tomatoes & cook for 8-10 minutes - until the tomatoes are blistering & soft. 3. Add in the white wine & simmer for 2 minutes. Then add in the lemon juice, lemon zest, salt, pepper & parsley & cook for 2 more minutes. Pour the mixture into a bowl & set aside. 4. Add 2 Tbsp olive oil to the pan & cook the cod for 3-5 minutes a side over medium heat. Cook time will depend on the thickness of the fish. 5. Flip the fish & cook for 3-4 more minutes. Pour the tomato mixture over the fish & cook for an additional 1-2 minutes to warm the tomatoes. Serve immediately.
