@rachel.houtteman: These Ground Turkey & Quinoa Stuffed Peppers (gf/df) will be a family favorite!🫑 RECIPE (makes 8 bell peppers) 4 large bell peppers, cut in half and seeds removed 1 tsp olive oil 3 cloves of garlic, minced 1 lb. ground turkey 1 tsp dried oregano 1 tsp salt 1/2 tsp paprika 1/2 tsp chili powder 1/2 cup frozen corn 1 large tomato, diced 1/4 cup cilantro, chopped 1/2 cup cooked quinoa Dairy-free mozzarella shreds - I used @GOOD PLANeT | Olive Oil Cheese Recipe adapted from @Lauren Levy Preheat the oven to 375 degrees F. Arrange the halved bell peppers evenly in a 9x13 baking dish. Spray the tops of the bell peppers with spray oil and bake for 10 minutes. Meanwhile heat a skillet on top of the stove. Add the oil and garlic. Sauté for a minute before adding the ground turkey. Continue to cook, breaking apart until the turkey is fully cooked and no more pink shows, about 6-8 minutes. Turn off the stove and add the spices, corn, tomatoes, cilantro, and quinoa to the turkey and stir to incorporate. When the peppers are done, evenly divide the filling between all the peppers. Top each stuffed pepper with the dairy-free cheese. Return to the oven and bake for another 15 minutes.
