This definitely separates students in class in culinary school. The ones that nail it the first time, are usually the ones that fly afterwards graduation. Not an easy feat 🫶🏼

When I was in culinary school, opera cake was part of our final practical exam. You had 4 hours to make that, 4 loaves of bread, an entremet, and 12 cream puff thingys.

My uncle can make them. He made one for my husband for the groom cake, but left it at the bakery. He made the wedding cake too. His cakes are amazing.

I’ve made opera cake a few times for my mom- actually a paleo version. It’s labor intensive, but I think it turned out pretty darn well..
