I added a slight twist to the strusel and added my own touch with the caramelized bananas 🍌🤤 2 cups all-purpose flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon a dash of nutmeg 1/2 cup salted butter , softened to room temperature 1/2 cup brown sugar 1/2 cup white sugar 2 large eggs , at room temperature 4 very ripe bananas , mashed with a fork  1/4 cup buttermilk 1 tsp vanilla extract strusel topping: 3 tbsp flour 1/4 cup brown sugar 1/4 tsp cinnamon 2 tbsp unsalted butter , slightly softened and cut into pieces 1/3 cup chopped pecans caramelized bananas: 3 bananas, sliced  3 tbsp butter 2 tbsp brown sugar instructions:  1. Preheat oven to 325 degrees F. Grease or add parchment paper to a 9x5 inch loaf pan. Set aside. 2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. 3. Cream the butter and sugars in a large mixing bowl until light and fluffy. Add the eggs, one at a time, beating well in between each addition. Gently mix in the mashed bananas, buttermilk and vanilla.  4. Slowly stir in the dry ingredients. Once the flour is incorporated, stop right there. Do NOT over stir.  5. Pour the batter into the prepared loaf pan.  6. To make the steusel topping, add the flour, brown sugar, cinnamon, pecans and butter in a medium bowl and mix until it comes together in clumps. I find it’s easiest to mix with my hands.  7. To make the caramelized bananas. Preheat a large pan to medium heat. Add the butter and once melted, add the brown sugar. Stir until it’s disolved and add bananas. Let them simmer for a few minutes on each size until golden brown.  8. Place the caramelized bananas down the center of the banana bread and sprinkle the streusel topping evenly on both sides. Bake the bread for about 1 hour or until a toothpick inserted into the center of the loaf comes out clean. 9. Remove from oven and cool 10-15 minutes in the pan. Remove the bread from the pan and continue to cool on the wire rack. Serve warm or at room temperature.
