HALLOUMI MEXICAN RICE 🧀🍚  This is such a delicious, high protein lunch or dinner recipe. Save for later☝🏼 •476 kcals per portion •45g PRO, 44g CHO, 15g FAT Serves 4: -1 tbsp of butter -1 onion, diced -2 cloves of garlic, minced  -400g of uncooked chicken breast, diced -1 red pepper, diced  -1 green pepper, diced  -2 tsp of paprika -1 tsp each of cumin, chilli powder & garlic powder -1/2 tsp each of onion powder & cayenne pepper -1 tsp of sugar -200g of uncooked basmati rice -2 tbsp of tomato paste -1 reduced salt chicken stock cube mixed in 400ml of boiling water -40g of sweetcorn -50g of white cheddar grated -20g of parmesan  -80g of halloumi -Coriander, for garnish (optional) Method: 1. Add butter to a pan on medium heat. Add the onion and garlic and fry for 2 minutes. Then, add the chicken with a dash of water. Fry for another 5 minutes or so.  2. Add in the peppers and let these cook to soften.  3. Mix in all of the spices listed above. Add the tomato paste, rice, chicken stock, sweetcorn and sugar. Bring to a boil then reduce the heat to simmer. Cover with a lid and let it cook for another 10-15 minutes until the rice has absorbed all of the water. 4. Once cooked, turn off the heat and let sit for 5-10 minutes. Remove the lid, mix and pat down. Top with the cheddar and the parmesan. Cover again to melt the cheese. 5. Chop the halloumi into chunks. Spray a pan with oil on medium heat. Add the halloumi and fry until golden brown.  6. Sprinkle the halloumi over the rice along with the coriander.  7. Serve into four portions when ready to eat.
