Ingredients. . 1. 150g smoked bacon, I used lean diced 2. 300g pasta, uncooked weight 3. 500-800ml chicken stock (hot) 4. 300ml milk, I used semi skimmed 5. 120g cheese, I used a mix of extra mature cheddar and mozzarella. . Salt and pepper to taste Parsley to garnish (optional) . Method . Fry off the bacon and then add in the dry uncooked pasta, add in 500ml of the stock and cook on high until it’s absorbed and the pasta is cooked al dente, adding more stock if needed. Then add in the milk and turn the heat down.. cook for a few minutes until it has thickened slightly and add in the cheese. Stir until melted and you have a nice creamy sauce. Season to taste.
