Serves 2 200g chestnut mushrooms 100g unsmoked back bacon 80g petit pois 1 tbsp tomato puree 75g garlic & herb Boursin 10g parmesan Chopped Parsley 150g dry tagliatelle Light cooking spray 1. Place a large frying pan over a medium heat, once hot, add the diced bacon and fry until crispy. 2. Remove the bacon from pan and add the sliced mushrooms into the same pan, sauté for 10 minutes until mushrooms are soft. 3. Meanwhile, place the tagliatelle on to boil and cook for 9 minutes until al dente, drain, run through some cold water and set aside. 4. Add the tomato puree and peas to the pan, stir to combine, cooking for a minute before adding the Boursin and cooked tagliatelle. Stir until everything is fully coated in the creamy sauce. 5.
