Cover and let it sit for at least 1 hour or overnight in fridge for best flavor.  In a separate bowl, mix flour with salt, pepper, garlic powder, and paprika. Dredge the marinated chicken in the seasoned flour, pressing firmly and coat well. Toss excess flour out. Heat oil to 170-180°C (340-350°F) and fry the chicken for 6-7 minutes, or until golden, crispy, and cooked through. For the coleslaw, mix shredded vegetables with mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Toast the burger buns with melted butter until golden. Spread a little mayo on the top bun, then assemble your burger with a layer of coleslaw, the crispy fried chicken, and a slice of cheese.
