Short rib rigatoni  📖 Recipe °Ingredients° Short ribs: •2-3 pounds bone-in beef short ribs  •Truff salt, freshly cracked black pepper & garlic powder (season generously) •2 tbs truffle oil  •1 whole garlic (minced) •1 cup white wine (Sauvignon Blanc) •1 cup Worcestershire  •6 cups beef broth •3 sprigs thyme •3 sprigs rosemary   •2 bay leafs  Pasta & sauce: •1 pound rigatoni  •2 tbs truffle oil •4-6 garlic cloves (minced) •3/4 cup white wine  •1 1/2 cup heavy cream  •9 oz parmigiano reggiano •splash pasta water  •1 tsp Italian seasoning  •1/2 tsp salt and pepper  °Instructions° Brown the Short Ribs •Preheat oven to 325°F (163°C) •Season short ribs generously with salt, pepper and garlic powder •Heat truffle oil in an oven safe pot or dutch oven over medium-high heat. Sear short ribs on all sides until deeply browned (about 3-4 min per side). Remove and set aside. Sauté Aromatics •In the same pot, reduce heat to medium. Add minced garlic. Sauté for 30-60 seconds until soft •Add wine, scraping up the brown bits •Simmer for 3-4 minutes until slightly reduced •Add beef broth, Worcestershire and herbs. Then return short ribs to the pot. Bring to a gentle simmer Braise •Cover and transfer to the preheated oven. Braise for 1-2 hours until short ribs are fall-off-the-bone tender. Cook Pasta & Finish Sauce •Meanwhile, cook rigatoni in salted water until al dente. Set pasta aside and Reserve 1/4 cup pasta water.  Sauce •In a sauce pan, on medium high heat, add in truffle oil and minced garlic. Sauté for 30-60 seconds •After sautéd, pour in your white wine and bring to a simmer (2-3 minutes. Then pour in your heavy cream. Stir and let come to a simmer •Reduce heat and add in your grated Parmesan. Stir until smooth and creamy.  •Pour pasta water in small splashes at a time until you’ve reached your desired consistency. •Once cream is made, add your salt, pepper and Italian seasoning and stir once more  •Toss rigatoni into the sauce, mix until covered Short ribs •Remove the pot from oven.
