@british_sourdough: My baking schedule for making a fresh sourdough loaf on a Wednesday morning Monday 9pm feed my starter Tuesday 6am make the dough followed by stretch and folds and bulk fermentation. Tuesday afternoon when BF finished shape and into the fridge overnight for cold proof Wednesday morning BAKE! What’s yours? #sourdough

Almost the same but I bake Saturday morning and mid - week ( Usually Wednesday 😁) two times a week, two different recipes because we love the variation ☺️🥰

Interesting… mine is about the same but 20% starter. Do you not find it is over fermented with that much starter and time for bulk ferment? How warm is the room where you’re doing BF typically?

what's your starter feeding ratio? if I use 1:2:2 ratio it takes about 5 hours to peak...so if you feed at 9pm and mix 6am, that's a 9 hour rise

Is the optimal time to add starter to a recipe while it’s peaked/doubled in size? Tried making a loaf with a starter that had peaked but deflated (and was a bit watery after) and it was a bust 😭
