1. Quality of land & water. 2. Different strains of wheat, US wheat has more gluten than Euro wheat. Not really a lot, but after processing it realky makes a difference.

The trouble is that the EU imports vast quantities of grain and flour from the US. So much so that it is highly likely that if you go to the EU you'll be eating the exact same stuff as in the US.

It’s soft vs hard wheat soft wheat contains less gluten and is grown much more frequently in Europe than hard wheat and in North America hard wheat is grown much more frequently than soft wheat
