Creamy Prawn Pasta | Packed with Bold Seafood Flavour and No Cream Needed This seafood pasta is rich and creamy — without using cream. It’s all about extracting flavour from the prawn shells and heads, paired with cherry tomatoes and finished in a luscious sauce. Ingredients for 2 pax: • 220g rigatoni or paccheri • 300g prawns (heads and shells reserved) • 10 cherry tomatoes • 2 garlic cloves • 1 glass dry white wine • 1 chilli (optional) • Fresh parsley • Olive oil and salt Method: Clean the prawns, separating the heads and shells from the meat (remove intestines). In a tall pot: add oil, garlic, chilli, and parsley. Sizzle, then add prawn heads/shells and cherry tomatoes. Deglaze with white wine, cover, and cook for 7 minutes. In a frying pan: add oil, garlic, parsley, and tomatoes. Sauté 2 minutes, turn off heat. Remove prawn heads from the tall pot, blend the rest, and strain into the frying pan. Add prawn meat and cook 1–2 minutes. Add al dente pasta and cook 2–3 minutes in the sauce. Serve with fresh parsley on top.
