My mama’s Stuffed Artichokes… a little labor of love, but absolutely delicious and nostalgic for me 💚 4 large artichokes 1 cup Italian style breadcrumbs or stale bread (or half of each like I did) + 1/4 cup for topping 1 egg 1/2 cup parmigiano reggiano cheese, freshly grated 3 cloves of garlic, finely minced 1/4 cup parsley, finely chopped 2tsp salt and pepper, more to taste 1tbsp olive oil ~3 cups of water OR white wine (or however much liquid it takes to be half way up the side of the artichokes…do not cover the artichokes!) 1. Prepare artichokes by washing them in cold water and letting them sit for 15 minutes (this helps open them). Cut off stem so artichoke can stand flat. Slice 1/4 inch straight from the top. Cut off the toughest outer leaves, but leave most of them on. With scissors, trim off the pointed tips of the remaining outer leaves. Bang the artichoke against a hard surface and loosen the leaves with your hands. 2. Place artichokes in cold water while preparing stuffing. Prepare stuffing by combining breadcrumbs, egg, cheese, garlic, parsley, salt and pepper. 3. Pat dry artichokes and take a handful of stuffing and push it inside the artichokes until full. Place inside the middle and in the crevice of the leaves. When done filling, round it out with your hands. 4. Place in a pot. Drizzle olive oil on top of artichokes. Sprinkle 1/4 cup breadcrumbs on top. Add water or wine to the sides of the artichokes until liquid is half way up the artichokes. 5. Cover and cook on low for 45 minutes or until artichokes are tender and stuffing is “cooked” through.
