Charsiu Bao (Bbq Pork Bun) Recipe! ✨ Hey guys it’s me Sam and I am joined with the very funny and good friend @David Correos  I asked him what did he want to learn to make, so here we are, making Charsiu Baos! Both the baked and the steamed version (using the same dough recipe!). Dough (makes 12): 500g high grade (bread/cake) flour  200ml milk  130ml cream  8g active dry yeast  80g sugar 1 1/2 tsp salt  1 egg Combine sugar, cream and milk in a bowl and heat 1min in the microwave until warm. Add yeast and mix through. Leave for 10min. Add everything into a large bowl and combine well. Knead dough for 15min. Add more flour if too wet during the kneading. Proof for 1 hour. Charsiu filling: 2 shallots diced 30g ginger fine diced  5 cloves garlic diced  250ml water Thickening slurry: 1 tbsp cornflour mixed with 1 tbsp water Sauce ingredients: 1 tbsp light soy 1 tbsp dark soy 1 tbsp oyster sauce 1 tbsp hoisin  1 tbsp red fermented beancurd (2 cubes) Drizzle sesame oil Mix the above in a bowl and set aside. 400g Pork belly (skin off) - fine diced  2 tsp salt 4 tbsp sugar 1 tsp five spice  2 tsp chicken boullion powder  1/2 tsp white pepper  Mix above ingredients and fry on high heat until slight burnt/charred on some bits of meat (1 min). Add aromats. Cook for 3 min on medium heat. Add sauce ingredients and water, cook for 5 min and taste, adjust if need. Thicken with slurry and chill. Portion dough into 12 equal parts, flatten and fill with about 1 tbsp of filling. If steaming, add some non stick paper on the bottom and steam for 12min. If baking, brush with egg wash and sprinkle sesame seeds on baking paper at 160-180C fan bake for 20-24min.
