Portuguese chef here. From minho where it originated. Caldo verde is on the menu tonight. Preparation is a bit different than tradition, but ingredients are spot on. Very close to how I make it.

that is more "soupy" but it's not caldo verde. the base is more wattery, no meat stock nor even the chorizo fat - that comes slightly is the end, when you put the chorizo raw. and moooore cabbage.

Just to clarify some comments … caldo verde isn’t made with chicken stock. This video it’s a personal take of it and the author does say exactly that ! So calm down and enjoy ! I want some caldo verde

as a Portuguese, I like these changes a lot! most dishes here are influenced by the fact we had to cook with the little we had, so I like seeing variations that add more stuff w/o going overboard 🥰

Your soup looks amazing but it’s not caldo verde, I think we use another cabbage here and the whole soup is green (hence the name, green soup). Its sold in packages named “caldo verde”

Really close 👍 you need to adjust ratios, about 4 times more greens and more finely sliced.
We don't usually render the fat out of the chouriço, but I liked that change.
