Greek Tomato Fritters - the best summer snack or summer appetizer (and definitely the best summer tomato recipe!) Blend. To a food processor or blender, add the yogurt, 1/3 cup sun-dried tomatoes, and 1 teaspoon of lemon juice. Blend until smooth.
