EGGS FROM AROUND THE WORLD 🌍 Welcome back to Eggs from around the world, my series where I’ll be showing you how to make some of the best egg dishes in the world. Today’s episode takes us to Mexico, to make some Huevos Ahogados, which is the Mexican version of the Shakshuka. A very similar dish with an almost identical method, but different ingredients. Full recipe below :) (2) 1 brown onion finely diced 1 tbsp avocado oil 3 jalapeno/serrano chili finely diced 3 garlic cloves finely diced 2 roma tomatoes finely diced 1 tsp ground cumin 3 free range eggs 10g freshly chopped coriander Salt to taste (1) Heat up a large non stick skillet on a medium heat. Once hot, add a dash of avocado oil, then add the onions and jalapeno, then cook for a few minutes until soft and fragrant. (2) Now add the diced tomato and garlic, then cover and cook for 8-10 minutes until the tomato breaks down and you start to see a sauce forming. Remove the lid, season with cumin and some salt to taste, then add a dash of water to bring the sauce together. Cover and cook for 5 minutes. (3) Now remove the lid and make 3 wells in the pan, then crack in 3 eggs, season with a dash of salt, then cover and cook until the whites have set. Serve with some freshly chopped coriander and enjoy. #eggs #eggrecipe #huevosahogados #mexicanfood #cooking #fyp
