This cake ✨🎄❤️ It’s Christmas embodied in a dessert. My 7 year old ate three slices and lovingly proclaimed, “THIS TASTES LIKE CHRISTMAS!” And so it shall further be referred to as the “Tastes Like Christmas” Spice Cake 🎂  My favorite tip for making a cake look extra fancy is to bake it in 3 6” pans instead of 2 8” pans. Then I slice each layer in half horizontally to give the cake 6 beautiful layers, each sandwiched between layers of yummy homemade frosting. Here’s the recipe (adapted from @cookingclassy ) 2 1/4 cups (318g) all-purpose flour (scoop and level to measure) 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 1/2 tsp ground cinnamon 1 tsp ground nutmeg 1 tsp ground ginger 1/2 tsp allspice 1/4 tsp ground cloves 1 3/4 cups (370g) packed light-brown sugar 3/4 cup (175ml) vegetable oil 3/4 cup (185g) unsweetened applesauce or puréed pumpkin 4 large eggs 2 tsp vanilla extract 1 cup (240ml) buttermilk 12 oz cream cheese, nearly at room temperature 1/2 cup (4 oz) unsalted butter, nearly at room temperature 3 1/2 cups (440g) (440g) powdered sugar 1/2 tsp vanilla extract Preheat oven to 350 F. Butter and flour 3 6” round cake pans. Mix together dry ingredients and set aside. Mix oil, brown sugar, and applesauce in stand mixer or in large bowl with hand mixer. Add in eggs and vanilla and mix well. Mix in half the dry ingredients, then the buttermilk, followed by the remainder of the dry ingredients. Pour into prepared pans and bake 20-25 minutes, or until toothpick comes out clean. Remove and cool. For frosting, mix butter and cream cheese together with mixer until smooth and creamy. Add in powdered sugar and vanilla and whip for a few minutes until you have a light and creamy icing. To assemble, level the cakes by cutting any domed tops off (and save for later snacking.)
