@muddlethroughmummy: Cosy season what I eat in a day 🎃 here’s the recipe for the healthy breakfast crumble: INGREDIENTS 400g cooking apples & blackberries (or whatever fruit you like) 100g Oats 150g Plain flour 30g Desiccated coconut 50g Coconut oil, melted 1.5 tsp Ground ginger 2 tsp Ground cinnamon 1 tsp Baking powder 1/4 tsp Salt DIRECTIONS 1. Stew down your fruit - basically just cook in a saucepan with a dash of orange juice or splash of water until its soft. Personally, I found this was sweet enough for me but you could as a tbsp of soft brown sugar if you prefer. 2. Mix the rest of the ingredients in a bowl to form the crumble topping. 3. In a heat proof dish, layer the crumble topping on top of the stewed fruit and bake for 25 minutes at 200°c or 12 mins in the airfryer. 4. Serve with your favourite yoghurt and honey or maple syrup.
