Creamy Parmesan Italian Sausage Soup Ingredients : 1 lb Italian sausage (mild or spicy) 1 tbsp olive oil (if needed) 1/2 onion, chopped 3 cloves garlic, minced 1 can (14.5 oz) diced tomatoes (with juices) 4 cups chicken broth 1/2 tsp Italian seasoning 1/2 tsp black pepper 1/2 tsp crushed red pepper flakes (optional) 1 cup small pasta shells or ditalini 1 1/2 cups heavy cream 1 cup grated Parmesan cheese 1 tbsp cornstarch + 2 tbsp water (slurry, optional for thickening) 1/4 cup chopped fresh parsley Directions : Brown the Sausage: In a large pot, cook sausage over medium heat until browned. Remove and drain excess grease if needed. Sauté Aromatics: In the same pot, add onion and garlic. Sauté 2–3 minutes until soft and fragrant. Simmer the Base: Add diced tomatoes, chicken broth, Italian seasoning, black pepper, and red pepper flakes. Stir in pasta and bring to a boil. Reduce to simmer and cook until pasta is tender (8–10 minutes). Make It Creamy: Add the heavy cream and Parmesan cheese. Stir until cheese melts. If a thicker soup is desired, stir in cornstarch slurry and simmer 2 more minutes. Finish & Serve: Return sausage to the pot. Simmer 2–3 minutes more. Garnish with chopped parsley and serve hot.
