Sweet Potato Casserole! ✨  Recipe 👇  For the Sweet Potato Mixture     •    3 cups cooked sweet potato (about 3–4 medium)     •    2 large eggs     •    ½ cup brown sugar     •    1 stick (½ cup) melted butter     •    1 tsp vanilla bean paste     •    Splash of vanilla extract     •    2 tsp ground cinnamon     •    Pinch of salt For the Streusel Topping     •    ½ cup all-purpose flour     •    ½ cup brown sugar     •    ½ cup chopped pecans     •    4 tbsp melted butter     •    Pinch of salt     •    Mini marshmallows (enough to cover the top) Instructions:     1.    Bake the Sweet Potatoes Wrap each sweet potato in foil and bake at 400°F for about 1 hour, or until fork tender. Stir until it forms a crumbly texture.     5.    Assemble the Casserole Spray a 2.5qt baking dish with nonstick spray. Spread the sweet potato mixture evenly in the dish. Add a layer of mini marshmallows on top, then sprinkle the streusel topping over the marshmallows.     6.    Bake at 375°F for 25 minutes, or until the topping is golden and the marshmallows are melted and lightly toasted.     7.    Let it cool for a few minutes before serving.
