Ramadan Recipes: Chicken Shawarma Recipe: - 1 kg chicken thigh fillets - 2 tbsp olive oil - 1 small lemon, juiced - 4-5 cloves garlic - 2 tbsp tomato purée - 1 tsp ground cumin - 1 tsp ground coriander - 1 tsp ginger powder - 1 tsp onion powder - 2 tsp paprika - 1 tsp hot cayenne powder - 1 tsp black pepper - 1½ tsp salt (or to taste) - 1 tsp zaatar or oregano - ½ tsp turmeric powder - ¼ tsp cardamom powder - ¼ tsp ground cloves - ¼ tsp cinnamon powder Method: 1. Preheat the oven to 180°C. 2. Marinate the chicken with all of the above, allow to marinate for minimum 1 hour or overnight for maximum flavour 3. Tightly pack the chicken into a loaf pan. Line loaf pan with parchment if not non stick. (If the chicken reaches the top of the loaf pan then place the loaf pan in a shallow tray to catch the juices incase of overspill) 4. Bake for 40–45 minutes, or until the chicken’s internal temperature reaches 75°C. 5. Let the pan cool slightly. Reserve the juices for brushing over the shawarma after slicing or using as stock for rice. 6. Slice and serve in a naan or pitta with garlic yoghurt, pickles, tomatoes, red cabbage and onions. #ramadanrecipes #shawarma
