I made northern beans, navy beans, pinto beans, but I’ve never seen them cooked with tomatoes and potatoes and bay leaves. What flavor does that give them and what beneficial is it to the beans?

Chicago I soak beans overnight, boil in clean water w tomato onion garlic salt chicharron & bacon grease. Cooks in 3hrs. Stainless steel pot keeps beens light in color. Other pot darkens them.
