🫒ROASTED KALAMATA OLIVES🫒 The love between Kalamata olives and Greeks is something only we understand. But I will also force them onto any guest that comes over and a great easy way to showcase them is by roasting them with heaps of aromats. As always recipe is below. #ad #alwaysfresh #blandidote 850gm @alwaysfreshau Kalamata olives (drained) 6garlic cloves (halved) 2 shallots (quartered) 1 long red chilli (halved) 1 lemon (peels) 4 oregano sprigs 2 burrata cheeses Olive oil 1 handful dill (garnish) Cracked black pepper Crusty toasted bread Set oven to 210 degrees Celsius In large oven tray add in of your olives, garlic, shallot, red chilli, lemon peels, oregano sprigs and enough olive oil so that it covers the bottom layer. Place in the oven for 30 minutes, or until your olives are blistered and sizzling in the oil. It should smell super aromatic. Whilst sizzling in the oven toast your bread in some oil on a pan. Remove tray from oven and open up the two burrata on the two sides and allow it to melt into the pan. Finish with cracked black pepper and finely diced dill.
