White chocolate raspberry lemon loaf🍓🍋✨                                                                        Recipe:                                                                             Ingredients  Raspberry lemon loaf -2 cups all-purpose flour (240g) -1 tsp baking powder -1/2 tsp baking soda -1/2 tsp salt -10 Tbsp unsalted butter, softened (141g) -1 cup granulated sugar (198g) -1 Tbsp lemon zest -2 Tbsp lemon juice  -2 eggs, room temperature  -1 tsp vanilla -1/3 cup + 2 Tbsp milk, room temperature (108ml) -1 1/4 cup raspberries (tossed in 1 Tbsp flour) (137g) -3/4 cup white chocolate chips (128g) Lemon syrup -1/4 cup lemon juice (59ml) -1/4 cup granulated sugar (50g) Glaze -1 1/2 cups powdered sugar (170g) -1 Tbsp lemon juice  -2 Tbsp milk  Instructions  For the raspberry lemon loaf: 1. Preheat oven to 350°F. Grease and line a 9”x5” loaf pan. 2. In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl add the sugar and lemon zest. Rub the sugar and lemon zest together with your fingers. 4. Add the butter and beat until light and fluffy. 5. Add the lemon juice and mix until combined. 6. Add the eggs, one at a time. When adding the second egg also add the vanilla. Mix until combined. 7. Add the dry ingredients to the wet ingredients alternately with the milk. Mix everything until just combined. 8. In a small bowl toss raspberries with 1 tablespoon of flour. Add the raspberries and white chocolate chips, and gently fold into the batter until just combined. 9. Transfer the batter to the loaf pan. 10. Bake 50 to 65 minutes. If it starts browning too much cover with aluminum foil. For the lemon syrup: 1. Once the loaf is cooled, add sugar and lemon juice to a small pot on medium heat. Mix until the sugar is fully dissolved and then remove from heat. Let it cool about 5 minutes and rub all over the loaf with a basting brush. For the glaze: 1. In a small bowl add powdered sugar, lemon juice, and milk. Mix until combined. If you want more of a thick consistency add more powdered sugar, and if you want it more thin add more lemon juice or milk. Evenly pour the glaze all over the loaf and sprinkle some lemon zest.
