Have you tried duck fat for the potatoes? We used the same method in a restaurant but used duck fat and it turns out amazing

No seed oils ❤️I’m an olive oil producer and EVOO is good for crisping! Can got up to 210C but in oven can go higher since measuring temp of food not oil 🫒
