@kauscooks: Chicken & Spinach Stuffed Pasta Shells Filling: - 500g chicken mince - 2 tbsp oil - 2 cloves garlic - 1 small onion or shallot - 1 red or green pepper - 1 tsp paprika - 1 tsp oregano - 1 tsp onion powder - 1 tsp garlic powder - ½ tsp red chilli flakes - ¾ tsp salt or to taste - ½ tsp black pepper - 200g baby spinach - 250g ricotta cheese - 75g shredded mozzarella Cheese sauce: - 30g unsalted butter - 2 cloves garlic - 20g plain flour - ½ tsp paprika - ½ tsp red chilli flakes (optional) - 1 tsp onion powder - 1 oregano - ½ tsp black pepper - ½ tsp salt or to taste - 500ml milk - 100g shredded cheddar cheese Pasta bake: - 500g giant pasta shells - Shredded mozzarella & cheddar to top - Sprinkle of oregano Cover with foil and bake in preheated oven at 180C for 20 minutes, remove foil and broil for 5-10 minutes until golden top forms. I managed to make 2 shallow tray bakes with the above recipe, one tray served 4 people (I sent one to my neighbours and they loved it, or you could freeze one for a later date - for all that effort, might as well reward your future self too!
