Line two baking sheets with parchment paper; set aside. Start by preparing the apple pie filling. In a medium saucepan over medium heat, melt the butter. Add the chopped apples, brown sugar, maple syrup, cornstarch, and cinnamon. Heat until the mixture starts to bubble. Then, stir and cover and allow to cook for 5 minutes. Stir again and then remove from the heat once the mixture is thickened and the apples are soft. Set aside. Prepare the salted caramel. Combine all of the ingredients for the salted caramel in a medium bowl. Mix until smooth. You can add more maple syrup to get your desired consistency, if needed. Prepare the cinnamon vanilla sugar cookies. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. In a separate large bowl, cream the butter and powdered sugar until light and fluffy. Add in the egg, avocado oil, and vanilla. Beat until combined.  Add the dry ingredients to the wet, and mix until just combined.  Mix together the granulated sugar and cinnamon in a small bowl. Use a large (3 tbsp) cookie scoop to scoop cookie dough balls, and roll each ball into a circle. Drop and roll the dough balls in the cinnamon sugar, then place on the prepared baking sheets.  Use a 1/8th measuring cup or the bottom of a small jar to press a circle into the middle of each cookie.  Bake at 350F for 8-9 minutes. Remove from the oven, press the measuring cup back into the hole, and bake for another 1-3 minutes until the edges are golden.  Cool the cookies. Fill each hole with the apple pie filling, and then drizzle with salted caramel.
