For food safety, always ensure eggs are cooked to 160⁰ F. ——Recipe—— Ingredients: 8 eggs 1/4 of a large onion 2 Roma tomatoes 6 garlic cloves 4 medium size potatoes, diced 1 Roma tomato, diced 1 stick of celery, chopped 2 corn on a cob 4 medium size poblano peppers 2 green onions, thinly sliced salt to taste chicken bouillon Mexican oregano   Preparation: 1) Start by roasting the corn straight on the fire.  2) Charr the poblano peppers and then put the poblanos in a zip bag and let them sweat for 10 minutes. After 10 minutes, peel the charred skin off, take the stems and seeds off, and dice them up.  3) With a knife, separate the corn from the cob and set it aside with the diced poblanos.  4) Blend the onion, 2 tomatoes, and garlic cloves with water and add it to a pot on medium heat, add the corn and poblanos, the diced potatoes, the diced tomato, and celery.  5) Crack the eggs on the counter, place them in a bowl, season with salt and oregano, and whisk well.  6) In a lightly oiled pan, add some of the egg with green onions to make thin omelets, and cut them into medium-sized squares, add them to the pot with more water to fill it up and season with salt, chicken bouillon, and Mexican oregano, let it simmer for about 15 minutes and is ready to serve. #Recipe #MexicanCuisine #eggs #cooking
