Who else loves homemade chutneys? 😍🍽️   Ingredients: 	•	500g tamarind (imli) 	•	400g dates (khajoor) 	•	1/3 cup dark brown sugar 	•	1/4 teaspoon salt 	•	1/4 teaspoon black pepper 	•	1 tablespoon vinegar 	•	2-3 cups hot water (for soaking and adjusting consistency) Instructions: 	1.	In separate bowls, place the tamarind and dates. Pour hot water over them and let them sit for 30 minutes to 1 hour to soften. 	2.	After soaking, strain the water from the tamarind. Place the tamarind in a fine-mesh strainer and squeeze out as much pulp as possible, discarding the seeds and fibers. Add 1 cup of water to help extract the pulp fully. 	3.Strain the water from the soaked dates. Remove any seeds if using whole dates. Blend the dates with 1/2 cup of water in a food processor or blender until smooth. 	4.	In a pot, combine the tamarind pulp, dates paste, dark brown sugar, salt, black pepper, and vinegar. Bring the mixture to a boil, stirring frequently to ensure the sugar dissolves completely and the chutney thickens to your desired consistency. Boil for 1-3 min 	5.	If you prefer a thicker chutney, leave it to reduce as it cooks. For a thinner chutney, add 1 glass of water and adjust to your liking. 	6.	Once the chutney reaches the desired consistency, remove from heat and let it cool.
